Choc Peanut Butter Protein Balls

Hey Guys,

I posted these protein balls on my instagram as a video but wanted to share the full recipe over on this platform so you guys have easy access to all of my free recipes!

These protein balls are soo delicious! My favourite snack to prep so I have a healthy treat ready to go if I want a little chocolate-y goodness after dinner or during the day. Our Ultimate Smoothie Blends are made here in Australia, and the blends were designed by me! We’ve used Hemp and Pea Proteins, added some adaptogenic mushrooms, and of course no nasties, no sugar and 100% plant based. They currently come in two flavours: Choc Peanut Butter (which I have used in this recipe) and Turmeric Gingerbread.

Okay so lets get stuck straight into these delicious protein balls!

Makes ~12-16 balls/serves

Ingredients:

2 cups peanuts/almonds (I used 50:50)

1 cup medjool dates, pitted

1 cup Choc Peanut Butter Protein

1/3 cup buckwheat kernels

1/2 cup shredded coconut

1/2 tsp salt

1/4 cup water

1/4 cup coconut oil

desiccated coconut for rolling


How to make:
Place the nuts into a blender and blend into a fine crumble.

Add the dates and process again.

Transfer to a mixing bowl and add the choc peanut butter protein powder, buckwheat kernels, shredded coconut, salt, water and oil.

Mix well using your hands.

Roll mixture into 12-16 evenly sized balls, roll in coconut and place into a jar/container.

Store in the fridge for up to 3 weeks, if they last that long!
